Propylene Glycol Alginate (PGA), which forms smooth and viscous solutions, that are stable
in the pH3~5 range and is suitable for use as a thickening agent for acidic foods.
PAG is also used as an emulsifier and as an emulsion stabilizer in acidic systems.
Alginate is a natural polysaccharide that comprises from 30 to 60% of brown algae
on a dry weight basis. Alginate (sodium alginate, etc.) contains very reactive
carboxyl groups that may cause unintended gelation or precipitation under acidic
conditions or in the presence of inorganic salts.
PGA is stable in acidic systems and is resistant to reaction with polyvalent
cations (such as Ca2+) because the carboxyl groups have been blocked by esterification
with propylene glycol groups.
